Gingerbread Refrigerator Cookies

From Gloria's kitchen we bring you a classic country favorite!
Ingredients:

1 cup (2 sticks) butter

1 ½ cups granulated sugar

I egg

2 tablespoons dark corn syrup

1 ½ tablespoons grated orange rind

1 tablespoon water

3 ¼ cups flour

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon ginger

½ teaspoon ground cloves


To make dough:

In a medium bowl cream butter and sugar until fluffy. Add egg and beat. Add corn syrup, orange rind and water, blend thoroughly.

In a large bowl sift flour, baking soda and spices together. Stir in butter and sugar mixture, blending well.

Divide dough in half. Shape each half into a long roll about 2 1/2" in diameter. Wrap in waxed paper or tinfoil and chill overnight.


To bake:

Preheat oven to 350 degrees.

Slice cookie dough into rounds between 1/8" and ¼".

Place on cookie sheet. Top with a walnut half if desired.

Bake 10 minutes or until slightly puffy and a little brown at edges.

Cool on cookie sheet.

Makes lots of cookies for giving and enjoying!
